I bought them today and I only need a small amount of each for a recipe, I probably won't need any more for a while. What can I do with the left over herbs as I usually end up throwing them away. Can I freeze them? Any ideas please.

Yes you can freeze them.

If they are leaves chop them up first - they won't be any good as leaves after defrosting but still make good flavouring.
You can also dry the Thyme...hang or stand the bunch upside down in a sunny dry place....it will dry in a few days.
I use loads of parsley and thyme in Chicken pie.
