Restaurants make a 'base' sauce to which they add different spices and herbs to to make whatever particular curry is ordered. This is basically pureed onion with garlic and ginger fried in ghee, with added ground coriander and cumin, sometimes tomato puree, and salt. CaroGirl has also recommended two excellent books - google them on Amason Uk.

Books by the Curry Club are good too, you can order spices from them too. Good luck!!
