Sure Eloisey!! This is a great 'left-overs' dish, but of course you can cook meat fresh if you want.
Fry a large chopped onion and some garlic (up to you if you like, omit if you don't!) in a little olive oil and butter until golden, season with salt and black pepper. Drain on kitchen paper. You can also add sliced button mushrooms if you like. Mix with cooked chicken and some diced ham (smoked is nice). for two people i reckon a large chicken breast and roughly 150gms or 5oz cooked ham (diced gammon is nice) is about right
Now you can either do a tomato sauce like for lasagne, jarred sauce is fine, else use two tins of chopped, some puree (2tbls) some mixed herbs BIG Handful of fresh, or two teaspoons of dried, some more fried onion and garlic and S&Pepper,
OR You can make a white sauce (again jarred is fine) and can add cheese or mushrooms to this. (2oz butter, 2 oz flour, seasoning, pint of semi-skimmed milk - melt butter add flour and stir all the time, gradually add milk whisking all the time until thick)
Add chicken mixture to sauce of choice, and fill cannelloni tubes.
Pour some white sauce in the bottom of a dish your cooking in, add tubes of filled cannelloni, cover with white sauce and sprinkle with grated cheese bake for about 3/4 of an hour gas 4, 180/350 to test if cooked stick a knife in one of the tubes, if soft then it's cooked! nice with garlic bread and a crispy fresh salad
Can be made with any left-over meat, mince, even corned beef, or vegetables
