Can anyone give me any recipes for home made stir fry sauces?  I'm trying to cut out the processed gunk I eat but I'm addicted to chinese food and iI can only find ready made sauces and stuff.   I'll try anything other than sweet and sour, something of your own creation would be great!

Sherry, soy sauce, crushed clove of garlic, grated ginger, pinch of 5 spice, brown sugar and spoonful of cornflour. Mix it together and add to whatever you're stirfrying. Can't give exact measurements cos it changes everytime I do it!

soy sauce, garlic, fresh or powdered, some juice out of a jar of preserved ginger and two pieces of the ginger sliced thinly. Great with a prawn stir fry

Use this one when the otner ingredients are cooked

Satay sauce

! heaped tbsp chunky peanut butter

soy

chilli sauce to taste or dried chilli

half a clove of garlic drushed

about 4 tbsp water

heat together gently and stirring until the sauce gathers together and thickens then either pour over your stir fry or stir in

Black Bean Sauce, serves 2:

Mix together 2 tbsp soy sauce, 2 tbsp black beans (ready cooked in brine) rinsed, 2 tsp soy sauce, 2 tbsp dry sherry or Sake. Add to stir fry in the wok at the end of cooking, bring to boil & stir for a few seconds until the sauce has thickened.

Soy sauce and teriyaki sauce mixed with garlic and chilli.  Have it with chicken/turkey/beef (the only meat i like in stir fry!), and loads of peppers, babycorn, courgette, mushroom, beansprouts or whatever you want to put in it.
