whats the best way to use overripe bananas?

Banana bread if you bake, but I would go for banoffee pie myself - yum!
Or - banana smoothies if you like them.

i hadn't even thought of banaffi pie - i thought you hd to have sliced bananas for that.
What would i put in the smoothie, yoghurt?
Banana cake...here's a simple recipe. You can freeze this cake also...IF there is any left!

ingredients

* 125g butter, plus extra for greasing
* 150g light soft brown sugar
* 2 eggs, beaten
* 3 very ripe bananas, mashed
* 250g plain flour
* 1 tbsp baking powder
* 1/2 tsp ground cinnamon (if wanted)

1. Preheat the oven to 180C/gas 4 (160C/gas 3 for fan-ovens). Grease a 1kg-capacity loaf tin and line the base with baking parchment.

2. Beat the butter and sugar together until fluffy and pale in colour.

3. Beat in the eggs, a little at a time, beating well after each addition.

4. Add the bananas to this mixture.

5. Sift the dry ingredients together with a pinch of salt and then fold gently into the banana mixture. (It is important to fold the dry ingredients in gently until just incorporated, rather than simply stirring.)

6. Transfer the mixture into the prepared tin and bake for 50-60 minutes or until a skewer placed in the middle of the cake comes out clean and dry.
Banana and rhubarb crumble is fantastic
You can make a lovelysmoothie with a ripe banana,a tub of yogurt, and a cup of frozen fruit such as pineapple or mango...it is really thick-like a milkshake.
I've made it with a little milk and a spoonful of runny honey - but if you google it, there are loads of different recipes. Depends what you like!
I can't see a problem in using mashed banana in the pie instead of sliced, it won't look quite so nice, so cover the top in cream to disguise it!

banana and rhubarb?? wow. I've got to try that! Do i cook the bananas with the rhubarb?
Will try the cake and a smoothie too -i have loads of bananas!
if they've gone beyond any useful purpose, peel them and put them out for the birds, they love them.
i make banana cake using bisquick, very easy and reliable. and delicious :)
Mush together the banana with some milk to get a consistency like single cream. Add Baileys irish Cream. Yummmm!!

I put them in some curries, especially nice with sour malaysian types or make a coconut and banana custard by blending the bananas with coconut milk adding cornflour and sugar and some double cream then baking in a steam bath in the oven for about 1 1/2 hours serve with rum cream 1/3 rum 2/3 double cream with soft brown sugar to taste

Yes crisgal. Just mix them in with the rhubarb and top with crumble. They add a lovely sweet taste to even the sourest rhubarb
