Beef or lamb scotch eggs

We make our own sausages, a beef with horseradish mustard, and a beef with mushrooms and guinness, and a lamb with mint, and a lamb with rosemary and soft apricots. The chicken ones i made was with minced chicken, I had been making an Indian dish, some kofta kebabs and I had this spicy chicken mince left over so I wrapped it around a couple of hard boiled eggs, crumbed and fried them, my 'testers' pronounced them 'delicious!' Unfortunately, I can't eat eggs, but i made some 'cocktail' ones with Quails eggs at Christmas as part of a platter of nibbles to go with drinks - they soon went, especially the lamb ones.
they are boxtops, unfortunately ours aren't available to the general public just yet, BUT Lashfords award winning sausages make them too - they call them Sovereign
