i love seafood paella, has anybody been sucessful making one?

i´ve seen several recipes, and will have a bash at making one soon.
not sure saffron´s that important though

I suggest you speak to NoMercy.as she has just returned from living in Spain,and has made numerous Paellas.
personally-I would see saffron as necessary if authentic recipes require it...it has a very distinctive flavour.
Its expensive saffron piggy,some people use tumeric instead...
If you use a very good home made fish or chicken stock maybe you can omit the saffron, but I choose to use it in my paella.
Turmeric will only give colour, but not the authentic flavour.
I can get saffron here in ethnic deli's for a few £. ....only a few strands are needed...so it is not really all that expensive.
