The gas in the drink is in solution and will be released when there is what is called a nucleation point ipresent - a small sharp edge or point on which a bubble can form - ice will have lots of them, so the gas will be released quickly. To see the effect even more dramatically, add something like a spoonful of sand to the drink - this has even more nucleation points and will cause it to fizz quite violently, probably overflowing the glass, so do it in the sink
