wow ive never heard of this before last week and made some yesterday and it was heavenly but a little sweet.
450g bread flour, 175 ml milk and 175 ml of water, 10g fast action yeast 1/2 teaspoon salt and 1 tsp caster sugar. mix all together and leave to rise for 40-60 mins
whilst rising soak raisins in the rum from ingredient list 2 (below) and heat for 30 secs in a microwave
once dough has risen break into about 20-30 different sized balls
for the topping
recipe i used was 2 oz melted butter, 4 oz brown sugar, 2 tsp cinnamon and 4 oz raisins and 4 oz walnuts (finely chopped) 40 ml of rum
melt the butter and mix the brown sugar, cinamon and walnuts in a bowl.
take each dough ball and dip in the melted butter then roll in the sugar mix and put in pan, do this with half the balls then pour over half the raisins, then repeat.
pour any leftover raisins or walnut/sugar mix over the top.
cover with clingfilm and leave to raise for 50 mins (should be double the size when you go back to it).
cook in a preheated oven (gas mark 5) for 30 mins or until golden
