i chop them into wedges, about 3 or 4 per half, depending on how big they are, just to help them cook quicker and so they're the same size as the other root veg.
If you've got a large beetroot try this experiment ( my old neighbour did this) cut a hole in it bung in a small daffodil bulb and plant the whole thing in a large pot.
in the spring when it flowers - - HEY presto - a pink daffodil.
