Why does my coleslaw go runny the day after I make it?

because the raw veggies have water in them. The mayo sauce is more concentrated than the juice in the veggies so it draws the water out of the veggies and into the sauce
give it a good stir. Wont be as firm as when you first made it but will blend the runny bits in with the mayo.
I think the real question is what do the supermarkets do to stop their coleslaw going runny?
Simple. They use guar gum and xanthan gum as thickeners...
