I saw Lakes on a Plate on Channel 4 yesterday and there was a woman making jam. It looked so simple - strawberries, rose petals and sugar simmered for an hour then boiled for 5 minutes. I was thinking of making blackberry jam the same way but what ratios of berries to sugar do I need? I only want to make 2 or 3 pots.
jam isn´t too difficult t make, but does need patience. i´d say for every 100g of berries add about 50g of sugar, you could add more later if its not sweet enough. if you want thicken it you need to add pectin or some apple.

Blackberry jelly reminds me of my childhood - my dad wouldn't eat jam with pips in, so mother spent hours every autumn straining the blackberries through a muslin cloth into a pan to make jars and jars of blackberry jelly.
and fruit. I had a bread maker that had a jam setting, so just put everything in a switched it on, never failed. as the sugar has the setting agent included in it already ;-)
