I thought you only lost nutrients & goodness in veg when it was cooked but someone recently told me that if you peel your veg & leave in water the day before you intend to cook it, then that would cause a loss in nutrients.

Can anyone advise!

i think that's correct. i believe the nutrients leech in to the water and then you cook the veg, drain the water off and it all goes down the plughole.

But in that case, surely, it would make no difference as you would lose just as much nutrients in the cooking process as you would if they were soaked!
Huh? It loses nutrients everyday after it is picked....Cook it the day before then..
Have you considered steaming your veg to retain most of the nutrients?
it would appear the longer the veg are in contact with water, the more nutrients they loose, so soaking overnight means they loose more than just boiling them for 20 minutes. have a look here for best cooking methods:

We've steamed all our veg for years, potatoes too - I love my steamer.

why would you leave it in water all day anyway?
I cook all my veg from frozen
My Mum us to peel the veg in the morning and leave it in water till she came home from work....Looking back..I don't know why.

Ummm, you were healthy and grew; so not much of a loss. Same as me and I'm sure many others...

I always read these things and think to myself "so how did people cope before all these discoveries were discovered"
