I thought you only lost nutrients & goodness in veg when it was cooked but someone recently told me that if you peel your veg & leave in water the day before you intend to cook it, then that would cause a loss in nutrients.
i think that's correct. i believe the nutrients leech in to the water and then you cook the veg, drain the water off and it all goes down the plughole.
But in that case, surely, it would make no difference as you would lose just as much nutrients in the cooking process as you would if they were soaked!
it would appear the longer the veg are in contact with water, the more nutrients they loose, so soaking overnight means they loose more than just boiling them for 20 minutes. have a look here for best cooking methods:
