Chicken and Onion Kebab Dish for Wendilla and anyone who wants it

2oz skinless chicken fillets
1 tsp olive oil, 1 clove garlic crushed
1 pinch of italian seasoning (this is what makes it taste gorgeous)
2oz chopped onion
**Cut chicken into strips and chunks and place in shallow dish with onions
Refrigerate for at least 1hr turning once. Drain and reserve onions and juice for basting
half Onion into wedges or use small onions whole
1tbs Balsamic vinegar and 1 tbs olive oil (more if you like more juice to baste)
pinch of black pepper
1 tsp grated parmesan cheese (optional)
** Cut onion into wedges, place in shallow dish or pie plate and drizzle with the mixed vinegar and oil. Sprinkle with the cheese and pepper
** Thread onion onto skewers with the marinated chicken rserving oil and vinegar to baste with.
** Place under medium grill 4-5 inches from heat source and grill until tender about 5 mins per side. Keep basting throughout
** Meanwhile cook some rice with added mixed sweetcorn and peas ( I also put red peppers or sauted mushrooms into cooked rice)

try chopping a banana into 3 or 4 chunks and wrapping each chunk in a slice of streaky bacon adn thread that on to the skewer along with the chicken. sounds a bit odd but it really is very, very tasty and is one of our favourite kebabs. i also use chunks of red pepper.

Hi bednobs. There isnt much juice from the first part. Its really just the oilive oil flavoured with the garlic, onions and seasoning. if you want more juice you could add a bit more oilive oil
Hope you enjoy it. You can prepare it well in advance as keep it in fridge and then within half an hour you can have a lovely meal
