I wanted to add what do you pickle and what is the best method to pickle foods?
I don't think you can pickle cheese,well not in the usual "pickle" method.
However,feta cheese is preserved in olive oil so you might be able to use that for other cheeses?
Many foods can be preserved in a viegar/spice solution,this something that has been going on for centuries.
