I do it all the time....I get the largest bird I can-about 2.2 kilos......rub with olive oil,a lemon and garlic....sea salt anf ground pepper........just a touch of water...not even a mugful. Put on high for one hour-then overnight on low. It comes out very moist...lovely.
I put some sliced potato and carrot on the bottom and sit the chicken on it after sealing it in a pan. Then pour some boiled water from the kettle in and put it on low in the morning (9-10am ish) and we have it about 4pm (ish). Always do it this way and will prob never cook a chicken in the oven ever again.
If it doesn't look like it will be ready in time for tea I put it on high.
ooh - i did it, and it was sooo good!
rubbed the chicken with salt pepper and sweet smoked paprika and sat it on a layer of baby potatoes, baby carrots and swede chunks.
I just covered the veg at the bottomwith water, put it breast side down and left it on low for 8 hours.
Got home from work, thickened the juice and pulled the meat - delish!
