I like currants in the actual batter mix (but no ones else does so I go without these days) and I like castor sugar, lemon and golden syrup on them (at the same time).
It was always lemon juice and sugar when I was a kid. (It was many years before I realised that pancakes could be eaten any other way!). I still like my pancakes that way.
Alternatively, maple syrup is nice, or canned raspberries and ice cream.
I have to make so many pancakes (you can have as many as you like on Pancake Day) that I'll do them during the day, they seem to keep fine, and then I can just zap them in the microwave at tea time.
Why is everyone eagerly waiting for 'Pancake Day'?
Pancake day can be any day - we have a pancake Day at least once a month, Lemon & sugar is my fav. - When in New York a few moons ago we went into a 'Pancake Bar' you could have 'em whatever way you wished, we asked for lemon & sugar & they looked at us as if we'd flipped, they had no lemons. They did however send one of their ass'ts to the local market to buy some. From then on they stocked lemons and chalked up outside they did so.& told us that they had several Brits in for their Lemon & sugar pancakes.
