Delicious eaten straight from the can but this is lovely too:
Chilled Lemon Flan
Base:
100g digestive biscuits
50g butter
1 level tbsp caster sugar (you can leave this out)
Filling:
125mls double cream
150g can condensed milk
Juice and rind of 2 large lemons
Topping:
Grated chocolate (25g)
15ml double cream lightly whipped
1 round tin (7inches approx)
1. Crust biscuits with a rolling pin in a sandwich bag. Melt butter and stir in biscuit crumbs, until they are coated throughly. Press down firmly in flan tin and chill in fridge.
2. Mix together cream, condensed milk and finely grated rind with electric beater at a slow setting
3. Slowly add lemon juice to cream mixture - this will thicken quickly - pour into flan tin and refridgerate
4. Spoon or pipe whipped cream on top and sprinkle chocolate over the top!
You can substitute limes for lemons and ginger nuts for digestives to make key lime pie! And you don't have to put the topping on, I often don't bother
