Ok katy!.............try this one, always works for me!...........8ozs self raising flour, 2ozs hard margarine, 1 teaspoon baking powder, rub together until resemble breadcrumbs, add milk until the mix just about binds together, not too much milk, get your had to bind it!.............cut out into the size you like, I prefer to use a smallish cutter, so that they cook and rise quickly, bake over half way up a hot oven, around 220c, remove from oven when slightly golden and cool on a rack!.........good luck!......
Sorry katy, should read 'get your hand in to bind'.............................
what no sugar at all welsh ?
do you use an egg-wash or brush with milk for the golden brown?

I know it's a personal preference but I like the milk.

sorry!...............forgot the sugar!...........watching TV at the same time!............I add about 1oz of sugar, but if you like more sweetness then you can add 2ozs!.........and yes, if liked you can add a milk wash too, I personally don't, I like to brush with a little water after cooking and sprinkle on some sugar!...............sorry about that!.........
I use the same recipe as welsh, 1oz of caster sugar and a small pinch of salt. cook for 8-10 minutes on gas mark 8. I dont egg wash mine, I like them soft and floury on the top. Home made jam and whipping cream, I little bit of heaven. Good luck with them katy
mazie, they should work fine!.............sorry I wasn't concentrating, watching the new drama on ITV!...........thanks for reminding me about the sugar!................
Welshi's recipe is the one I use but can I just say, roll the scones out about 1 inch thick so they are sure to rise well. Love scones, may I come to tea please <smile>
classylady is right, should have said that too!..............sorry, should have been concentrating more!...........

Try mixing the dry mix with natural yogurt instead of milk, it makes lovely light scones. - and I always add a few sultanas for extra texture.
I tried the BBc jane Hornby recipe and thoroughly recommend it-no egg just milk and I used some bottled lemon juice. Don`t work too hard when mixed and dip cutter in flour to cut out nice and thickly. The tip with placing on a tray previously hotted up in the oven worked well. I used milk to brush over but you can use beaten egg if you have some.
