I'd love to make my own, does anyone have any recipes please?

you need gram flour, into which you add spices of choice, and water - the batter should be quite runny - you then mix in masses of finely sliced onions - you then drop spoonfuls of this mixture into VERY hot fat (you really need a deep fat fryer for this, and use groundnut oil) - the batter solidifies and crisps up very quickly but the onions stay nice and tender inside - there is nothing quite like pakora straight out of the fryer - delicious
you can buy the gram flour from any *** shop or huge supermarkets.

thank you kindly. Will go hunting for gram flour later this week. Oh, and will have to not only buy groundnut oil but will have to clean the deep fat fryer (a favourite job of mine :( )

I'll give it a try next weekend.
Most asian shops sell these ready mix pkts and you only need a fry pan with hot veg oil.

Hiya albaqwerty, bellabee is correct, piggynose also, Gram flour is the flour to use approx 3 cups, the spices that i use are similar to what are used in most restaurants, Turmeric (Haldi Powder) about 1/2 tsp this gives the clasic yellow colour, beware not to spill it stains like heck, chilli powder for heat ( to Taste ) again be aware it burns the skin, if you like chili, try ading a finely chopped fresh chilli, any variety except scoth bonnet (Wrong Flavour) Garam Masala (Heating Spice) 1/2 tsp, chopped fresh coriander 1 Tbsp, 1/4tsp bicabonate of soda, 1/2 Tbsp lemon juice (bottled is fine) salt (to taste) then add water a bit at a time to made a paste the consistancy of thick cream,and add about 12oz of onion, sliced about the thickness of a pound coin around 1 1/2 inces in length ( this is only a guide) then, in you favorite deep fat frier (recently cleaned) fill with Vegetable oil ( restaurants don't use expensive groundnut oil !!! ) heat to about 180 c, by now the onions will have released water into the mix, it should not be to runny ( just add a little gram flour if needed ) ok so far, now use 2 tablespoons, dip them in the oil ( stop sticking ) take about 1/2 tbsp of mix and put into the frier ( basket removed ) repeat quite quickly ( practice makes, etc) fry till golden, pop onto an absorbent surface, consume with Mint Dahi.....
