i have only just seen this question, hope its not to late to answer, as far as the jam is concerned if you put it back in the pan and simmer it carefully stiring it all the time so that the sugar dont burn, enough liquid may go off in steam to let it set, or you could add some more lemon juice or other pectin, good luck with that, as for the piccallili maybe if you heat it up again and put in some more thickening that would help.
