forty Clove Chicken

I have lost the recipe I had for this, one of my favourite dishes. I know it had 4 chicken quarters, celery, tarragon, and a splash of cognac. And the garlic of course. Anyone out there with the same one - or similar. Ta very much.

Sounds delicious; although caramelising the garlic seems a bit of a lost opportunity.
