Just been looking at this recipe from James Martin. You have to simmer the oranges in water til soft, let them cool then chop them up and whizz in a food processor (minus pips) with sugar, eggs , almonds etc. He doesnt say you have to remove the peel so I am assuming that as its gone soft it loses its bitterness ? Has anyone made this cake before ?

He made this cake on television the other day, the whole orange goes into the food processor. It looks very good, so I will have a try
I used to make a similar one-and yes-all the orange is used. It was a lovely, moist cake.
Even though you blend it in a processor, if you don't like peel in your marmalade you may not like the texture of the cake. I've made it several times and it can have a grainer texture than a normal sponge cake.
I suspect the almonds also contribute to the texture.
Why do people always assume you have a processor. What do I do if I haven't got one? Well, give up and not make the cake I suppose, but I would love to have a go at it and I can't. It's like assuming you have a computer. Not everyone has one. Or even a PS3.
I have tried to taste it and i don't like it.. although we have different taste but in my eat not so good. ;)
Jeff... lol. Too easy!
