Right Tink, I've found it.....
You need -
6oz butter
Grated rind of 1 lemon
Pinch of ground cinnamon
1/2 lb caster sugar
4 eggs
10 oz plain flour
1 teaspoon baking powder
2 1/2 fl.oz milk
4 slices candied peel
1. Grease a 8in cake tin with butter or lard
2. Set the oven to gas 4 / 180C
3. Cream the butter and slowly beat in the lemon, cinnamon and sugar, until light and fluffy.
4. Beat in the eggs one at a time, adding a little flour as you go, to prevent curdling.
5. Sift (I love that word) the remaining flour with the baking powder. Fold in with a metal spoon.
6. Add enough milk to bring the mixture to dropping consistency (it'll drop off a spoon rather that run)
7. Spoon the mixture into the cake tin and even out with a palette knife.
8. Bake for 1 1/2 hours, turning the temperature down to gas 3 / 165C after 45 mnutes.
9. Let cool for 10 minutes, then gently ease out onto a wire rack. Decorate with peel.
And that's all there is to it.....
