sinking victoria sponge update
After consulting my sister, she said she always weighs her eggs. So I used the 6-6-6 oz method with three eggs. I weighed the eggs (7oz) and then, as she instructed, made up the difference with the flour as in 7oz s.r. flour (sifted, with 1 and a half teaspoons baking powder), cooked at 160fan for about 25 minutes and hey presto, a nicely risen cake to be proud of! Thanks to everyone for their suggestions - I naively blamed it on my new tins.

Easiest Victoria Sandwich Recipe Ever!
200g caster sugar
200g soft butter
4 eggs,beaten
200g SR flour
1 tsp baking powder
2 tbsp milk
Preheat oven to 190 degrees
Put all ingredients into a bowl all at once and beat to a smooth mixture. Divide between 2 sandwich tins and cook for 20 mins or until golden.
For the filling mix together 100g soft butter,140g icing sugar and couple drops of vanilla essence. Spread on one side of the sponge when cool, spread the other with raspberry jam and put together. Sieve icing sugar on top. delicious!
