Another query about Green Tomato Chutney.

I followed the instructions to the letter - or so I thought - but the final mixture is very liquidy. The last bit of the instructions was to simmer for about an hour, which I did. Now I am wondering if I should have left the saucepan lid off. I am tempted to put it all back into the saucepan and try simmering with no lid. Can someone please advise me?

You've nothing to lose by boiling it up again - but yes, leave off he lid. It gets a bit tying in the final stages as you have to keep stirring regularly to stop it from catching on the bottom of the pan.
If it doesn't thicken up, you've lost nothing by having a go!

Tee-hee - wish I did, I could make a fortune. Did what you said and there is a vast improvement in the texture. Now all that remains is to try it out and see what the family says.
Be sure to leave it at least three weeks before you eat it. If you try it now, chances are it will taste quite vinegary, but leave it to mature for a while and taste the difference!!

Hope I'm not too late! You should leave it for 3MONTHS MINIMUM to mature....12 months is a lot better..
