I am going to make an exotic sounding Turkestan Loaf. It has numerous different seeds, all but one kind I have been able to get. The missing one is 'cracked rye'. No luck in the supermarkets, and blank looks in the Polish delis. Given that there are 7 different seeds in the mix and it needs only 30g of each, what can I substitute for the cracked rye. Or can I live without it. Many thanks.
Thanks for all the responses folks. It can be had on-line of course so I will get it that way. I found the recipe in a book of different bread recipes 'Ciabatta to Rye', the Turkestan loaf took my fancy and a couple of friends have urged me to give it a go. Thanks again.
