Am I better off roasting or slow-cooking ? And would they benefit from a spell in the freezer first ?

I'd roast, but that's personal choice - not sure what the benefit of pre-freezing would be.

neither am I boxy, but it was a suggestion from one of many books I've been hunting thru - wish me luck
have a look at saturday kitchen, raymond blanc is cooking duck this morning.
