Does anyone know what flour they use to make semmel rolls? I have tried different flours but nothing tastes like the Austrian ones. Hope you can help. Many thanks, Bramley.

Having had a Google round, as I'm sure you have too - a lot of folk struggle to get them just right.

I have seen using Bread Flour as the best tip,but bet you've tried that too.

Yes I've been trying for a few years now. I asked an Austrian and he gave me a number of the flour. I think it referred to the grain size. Anyway thanks for your input. Bramley.
