We are having a leg of lamb for christmas.

For more on marking an answer as the "Best Answer", please visit our FAQ.I favour the Greek method. Similar to Kleftiko. Stab the joint all over with a sharp pointed knife quite deeply. Slice fresh garlic cloves into slithers and insert them in knife slits with small sprigs of Rosemary.Sprinke with Olive oil and lots of salt on theskin,wrap in atight parcelof foil or greaseproof paper and slow roast in oven at about 180 for 3hrs or so. That is off the top of my head. Can dig out recipe if you are really interested.
