How To Cook Liver?

Hello I am going to buy some liver but have no idea how to cook it. I remember years ago my Mother cooking it but it was like leather! Does anybody have a simple recipe for it, maybe with onions or a casserole etc? Thanks in advance.

remove any fatty bits cut into your preferred size, dust in flour and pan fry..does not take long...I do onions in pan first so the liver gets more onion flavour..I also toss in a few mushrooms and sausages cut into 1" bits...yum yum...serve with mash if you want..I just have it as it comes out..
or put in slow cooker with all above with an onion gravy..cook on low
I do in slow cooker on low and comes out lovely
Rolled in flour (maybe add some of your favourite spices, piri piri is nice with liver) fry in butter and oil a very hot pan get the outside seared, then cook for a couple of mins longer on a lower heat.

It's the only thing to do with liver ... never casserole
Fry it gently as you would a medium steak. It should still be a little bit pink in the middle. It cuts through like butter. Incidentally, the tastiest and cheapest is ox liver. Forget lamb or pig's.
Depends which liver you get. For calves or lambs liver pan fry for 1 minute a side to avoid it becoming leathery.
I do lamb's liver in frying I've cooked onions and loadsa garlic in, I caramalise it with brown sugar, then leave in oven while I fry liver,...only 2-3 mins on each side, making sure there's no pink left, overcooking can make it tough, then serve with caramalised onions and garlic....love it! :)

Very, very gently is the answer. Check out the Hairy Bikers' recipe for live onions. Works a treat. Then, using the same method, try liver risotto. Use lambs' liver.
