Gnocchi
My partner is away for a few weeks and I am getting a bit bored with my usual repertoire in the kitchen. I have found a bag of Gnocchi in the fridge which is still OK to use. I am thinking of cooking it in water then browning it in a pan in butter, adding fresh Parmesan and serving with some fried chicken. Question is, as it is a big bag, could I use some of the gnocchi in a salad tomorrow, and if so could I brown it all today and keep it in the fridge to mix with leaves etc. tomorrow or would it be better to cook it tomorrow? (I have never cooked gnocchi in my life so feel free to tell me I shouldn't even be cooking it that way.)

You don’t need to cook them in water before frying unless they are particularly dry, just toss in a frying pan straight from the bag. I would fry them fresh again tomorrow as they won’t stay crisp which is a big part of the joy of fried gnocchi. I find a bag will keep in the fridge sealed for about a week, or transfer to an airtight container. They are lovely with some fresh chopped rosemary leaves tossed in at the end of the cooking time. Delicious fried in bacon fat and then tossed with crumbled up crisp bacon as well.
Thank you very much, woofgang. Perfect timing too as I am just about to go and make it. I will, as you suggest, just fry what I want tonight, and if it is good cook the remainder tomorrow. Since I posted it dawned on me that I quite like hot things with salad so I might fry the remainder tomorrow and serve it hot with salad.
