i know sounds dumb, anyone got an easy veg receipe for veg soup with chunky bits... everytime i try it it taste horrible.

Just had a look on the site you suggested - brill. I have a couple of leeks left in the bottom othe fridge and wondered what to do with them - found an interesting recipe which I'll try later
Hand full of red lentals, 1 leak, 1 onion, 3 carrots, 1 turnip, 1 savoy cabbage, 3 potatoes, 1 packet of KNOW cream of chicken soup (i know but the chicken tastes better than the vegtable!)
Soak the red lentals over night
Cut up all the veg and put it in a large pan
make up the packet of soup as stated on the back of the packet and pour over the veg(add more water if required)
bring to the boil then turn down and simmer for about 2 hours or until veg goes soft and liquid goes more see through!
I hope you like it, its my own reciepe!!

2 key ingredients to add to boiled chunky vegetables and water is - Tomato ketchup, and a vegetable stock cube!

This is my own recipe for veg soup and it's delish. I use as many carrots as possible x 4-5-6(gives a good colour to the soup), potato x 2 nice size ones, onion x1 or 2 if small, leek x1, turnip x 1, 2 if small, suede x1/2, parsnip x 1, couple of sprigs of flat parsley, (chopped)..in South Africa we call it celery. Vegetable stock granules x 3 tsp(optional, only started using it lately, found it works well).
put all peeled washed veg whole in good size pot with boiling water, more than cover with water, close pot with lid cook till boiling, then open lid slightly, lower heat and simmer for 2-3 hours stirring occasionally (or until you feel it is ready), during cooking time test veg if soft, remove veg (leave stock simmering) from pot and mash with potato masher by hand,( that way it's still a bit chunky) return mashed veg to pot and ad flat parsley and add vegetable stock granules. Add salt and pepper to tast.
If too thick you can always add a drop of extra water.
you can cut veg to thickness desired before adding to pot and cook as is.
I find the longer it simmers the tastier and thicker it is.
I hope this works for you. I find it the easiest home cooked soup. Of course you can add cabbage or any veg you like.
