1 tablespoon vegetable oil
2 ribs celery, chopped
1/2 cup chopped onion
1 1/2 pounds lean ground beef or 1 pound lean
ground beef and 1/2 pound ground pork
3/4 cup oats, quick or old-fashioned
1/4 cup chili sauce or ketchup
1 tablespoon Worcestershire sauce
1 1/2 teaspoon salt
1 large egg, beaten
3 tablespoons water or milk
PREPARATION:
Heat oil in a large skillet over medium heat. Add chopped celery and onion; cook, stirring, until tender, about 7 to 9 minutes.
In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
In a 13x9-inch baking pan, shape meat mixture into a 9x5-inch loaf. Bake at 375� F for 1 hour. Using 2 spatulas, carefully move meat loaf to a serving plate and slice. It helps to let it cool and set for a few minutes.
Serves 6 to 8.

Meatloaf With A Bite
INGREDIENTS
455 g ground beef
355 ml medium salsa
25 g grated Parmesan cheese
30 g shredded Monterey Jack cheese
1 egg
70 g crushed saltine crackers
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, mix together ground beef, salsa, cheese, egg, and cracker crumbs. Form into a loaf, and place in prepared pan.
Bake for approximately 1 hour, or until done. Internal temperature should measure at least 160 degrees F (70 degrees C), the meat should be browned through, and the juices clear.
Italian Style Meatloaf
For the fresh bread crumbs, use 6 to 8 slices bread crumbled into tiny pieces.
INGREDIENTS
1 carrot, grated
0.5 onion, chopped
2 cloves garlic, minced
30 g chopped fresh parsley
910 g ground beef
120 ml ketchup
2 eggs
70 g fresh bread crumbs
235 ml tomato sauce
4 g white sugar
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium high heat, saute the carrot and onion for 2 minutes, or until onion is transparent. Add garlic and saute for 2 more minutes. Remove from heat and let cool.
In a large bowl, combine the parsley, beef, ketchup, 1/2 cup tomato sauce, bread and eggs, mixing well. Add the carrot/onion mixture and continue mixing, but do not over mix, as this will make the meatloaf dry. Transfer mixture to a 9x13 baking dish and form into a loaf.
Bake at 375 degrees F (190 degrees C) for 30 to 45 minutes.
While loaf is baking, heat the remaining tomato sauce and sugar in a medium saucepan over medium low heat. Pour over loaf when done.
