my son is now living alone, and experimenting with cookery. he has got a slow cooker and would like some easy recipes to try. (he also wants to make something vegetarian in it for his girlfriend ). any ideas please ???????? thank you

This is my favorite recipe - I have shared it on AB many times. It is super easy, super inexpensive and could be changed to vegetarian easily.

Taco Soup

1 Pound Hamburger (Mince) � Browned & Drained
1 Pack Taco Seasoning
1 Can Ro-tel Tomatoes (has jalapeno in it)
(can is the size of a Campbell�s soup can)
1 Can Dark Red Kidney Beans
1 Can Corn � Whole Kernel
1 Can of Water

(You can also add carrots, peas, white beans, potatoes - just any vegetable you like best.)
Mix together & cook until it looks/smells done - although everything is already cooked - so you COULD eat it as soon as it gets hot. You can also put it in a crockpot/slow cooker.
After you put it in your bowl � taste it, it is great that way and less fattening � then put a big blob of sour cream in it and mix it up � then taste it again.
Garnish with black olives, cheese, onions, chives � whatever makes you happy.
I multiply the recipe (with less meat and more corn - just a personal preference) and freeze containers of it to pop in the microwave to thaw and heat later.
I use my slow cooker once or twice a week, and I usually eat some and freeze the rest to eat later. I do cook in it - that is, actually prepare meats and veggies, pre cook where needed etc, but one of the best uses I have found is to "Modify" already prepared stuff. For instance, I buy a couple of packets of dry soup, but I will add stuff as appropriate. For instance, vegetable soup I will add fresh mushrooms, onions, leeks, etc - basically whatever I can get which I think will be OK. I also use dried veggies, and "soup mixes" of dried veggies which thicken it up nicely.

Last week I had a nice beef soup/stew, which I simply made up of Mushrooms, Onions, taters, peppers, and some cooked cut up burgers and gravy granules. So easy too - did it when I had time, flicked the cooker on b4 I went to work, and I have come home to a hot meal for little effort.
Silverdaler - does he also know that before he goes to work he can put a frozen or raw roast or chicken in it - no liquid of any kind - sprinkle whatever herbs/spices he wants to put on the meat - and leave it on low all day. When he comes home, the house will smell wonderful and the meat/chicken will be falling off the bone tender. I did that for years - they are good for many things, but that what they are best for in my opinion:)

Although not a vegetarian, I have used this recipe in the slow cooker, it's delicious. I also cook some long grain rice separately and put in individual microwave containers, top up with some of the veg curry and then freeze for meals to take to work. I take them straight from the freezer in the morning and by lunchtime they are ready to reheat in the microwave. I also do this with pasta and chilli dishes.

VEGETABLE CURRY

Slow Cooker (Low 8-10 hrs)
Serves 4

1 tbsp Olive Oil
1 Tsp Dried Chilli
1 Onion, finely chopped
2 Tbsp Chutney
1 sml Head of Celery, thinly sliced
397g (14ozs) Can Tomatoes Incl Juice
1 Red Pepper, roughly chopped
300ml (� Pint) Water
100g (4ozs) Orange Lentils
Bay Leaf
1 Tbsp Curry Powder
1 Tsp Salt
1 Tsp Turmeric
1 Tbsp Lemon Juice
1 Tsp Cumin
2 Tbsp Tomato Pure�

Pre-heat slow cooker for 20 mins.

In a large frypan gently fry onion, celery & red pepper in the oil until softened but not browned. Add all the remaining ingredients. Bring to the boil & transfer to the slow cooker. Remove bay leaf before serving.

Optional.
Add sultanas(towards end of cooking time) and/or apple.
Options of cauliflower/carrots/sweet potatoes/butternut squash.
