to go with rice and peas.

Does anyone have a traditional recipe for me to try? Willing to try goat as well - I assume the recipe would be similar.

Hi E - one curried goat here: http://www.caribbeanchoice.com/recipes/recipe. asp?recipe=95 or try one of variations here: http://www.astray.com/recipes/?search=curried+ goat

Another option form Sandals Resorts:
1 cup curry powder
3 large sprigs thyme
3 scotch bonnet peppers, finely chopped
2 onions, diced
1 bunch scallions, diced
Salt and freshly ground black pepper
4 pounds goat meat, bone in (lamb meat may be substituted)
1/2 cup chopped fresh garlic
1 carrot, diced
2 tomatoes, diced
1 pound potatoes, diced
1/2 cup chopped ginger
3 quarts chicken stock

Directions:
To make the marinade, combine the curry, thyme, scotch
bonnets, onions, scallions, salt, and pepper. Marinate the goat meat overnight.

Remove the goat meat from the marinade. Reserve leftover marinade.

In a hot braising pan, brown the goat meat and garlic. Add carrots, tomatoes, potatoes, ginger, and reserved marinade. Add stock and stew for approximately 1
hour until meat is tender or about to fall off the bone.

As a comment, the meat will always be better cooked on the bone - why waste time removing when it adds flavour anyhow? And as everyones auntie has a variation, try a couple of adaptations to egt hte result you like the best.

Chill.............

Thanks N. Doesn't look to complicated. :)

I must keep my eyes open for a passing goat....

Hi E - glad to help - as a suggestion, try Graigs Farm for online goat meat if there aren't any of the little darlings wandering round your neighbourhood Site here: http://www.graigfarm.co.uk/goat.htm and organic too. The above is good with lamg of course, and the marinading will really add to the results.

As it is FairTrade Fortnight at the moment, why not support the UK producers as well?!!

Have fun...
