Can anyone recommend a comprehensive book on Moroccan food - I'm particularly interested in tagines and pastilla - I've seen several books locally, but these are all generic ' middle eastern cookery' type volumes, which isn't what I'm after. Any recommendations gratefully received - I've also put this request in the books section, so I'll probably get moaned at, but a book is a book whatever it's about! Thanks all!
Look out for one from Lonely Planet guides - 'World Food: Morocco' which might do you, or have a look at the titles here: http://www.alibris.com/search/books/subject/Co okery%20Moroccan and see what takes the fancy. Robert Carriers title may be the one to go for - you can trust his work, but there are quite a few from 'local' authors as well.
Hope this helps..and do try the recipe suggestions in the link too!
Moro by Sam & Sam Clarke is excellent. Essentially a Spanish cookbook but lots of Moorish influence and N.African recipes. Their second book, can't remember the name (Casa Moro??) is also superb!
