Line the base of a swiss roll tin with greaseproof paper.
4 ounces of Self-Raising Flour
4 ounces of Caster Sugar
4 ounces Margarine
2 Eggs
Beat the above ingredients together, spread evenly in the tin, and bake for 10 to 12 minutes, until a pale golden brown. Leave to cool in the tin for just a few minutes, but whilst it is still warm, tip out face down onto another sheet of greaseproof . Peel off the greaseproof paper it cooked on. Using a knife, trim off the very edges - leaving soft sponge. Roll the sponge up and leave to cool. When it is cold, then very carefully unroll it, and make up your version of an arctic roll. The sponge cake will not roll up if you leave it to go cold first. It has to be done whilst it is still warm.
