I make a risotto by frying in a mixture of oil and butter - onion, red pepper, green pepper, mushrooms and some bacon cut into small pieces with scissors. I then add the risotto rice and fry for another couple of minutes whilst stirring before adding a chicken stock cube disolved in water. Then I add some chopped cooked chicken (this is great for leftovers from a roast chicken) and a vegetable stock cube disolved in water. My kids (and me) love it.
