Fry meat to brown, remove and gently fry coarsely chopped onion, garlic , ginger and chillis. When soft remove from pan, cool, and puree in a blender along with a tin of tomatoes. returnto pan and fry for 5 minutes on a medium heat. Add 1tsp garam masala, 1 tsp ground coriander, 1/2 tsp chilli powder, 1/2 tsp turmeric made into a paste with a tblsp vinegar, fry for 5 min. Add meat, 2oz creamed coconut and simmer until meat is tender.
Its also v nice with chopped banana instead of coconut.
Fry chicken breast with patkas curry paste of your choice, garlic and ginger until browned.

Add chopped onion, peppers, mushrooms and pineapple and stir fry for a few minutes.

Allow to cool a little then add a tub of Greek yoghurt. Mix together and simmer for about 5 minutes. Add some chilli for spicyness and creamed coconut for taste. A dash of double cream can be added and i always chuck in a few spoonfulls of soft brown sugar to sweeten it up a bit.

I made one from scratch as above in 10 minutes on saturday.
