This is one of my fave recipes - red cabbage braised with apple, bacon & balsamic vinegar.
Olive oil
250g/9oz sliced smoked streaky bacon
1 tablespoon fennel seeds
1 peeled & sliced onion
2 eating apples, peeled & chopped into 1" pieces
1 red cabbage, chopped
salt & pepper
150ml/5.5fl oz balsamic vinegar
1 knob of butter
handful of chopped parsley

Heat the olive oil in the pan & add the bacon & fennel seeds. Cook until golden then add the onion & cook until golden. Add the cabbage, apple, salt & pepper & balsamic vinegar & stir. Put the lid on the pan & cook on a low heat for 1 hour, stirring occasionally. Add the butter, sprinkle on the parsley & serve.
This is a gorgeously sticky-sweet cabbage dish, mmm!
I sometimes shred some red cabbage, fry in a knob of butter, then add a small jar of cranberry sauce, turn the heat down to low, cover and let it cook for around an hour.

It's nice but I must say, mrs overall's recipe sounds far more scrummy!
