large Ice Crystals in my sorbet

Hi, Just tried to use my new icecream maker (not a pre-freezing model) for the first time to make a sorbet. Followed the instructions, and the machine came on and did the mixing as it was supposed to- however now it is finished, the sorbet has rather large ice crystals in it. What can i do to avoid this, why did it happen?
