does anyone have a sort of simple recipie for creamy sauces maybe leek&mushroom or bacon&leek &cheese

Hi fluffyfeet,

For a basic roux sauce, melt approx 75-100g butter with approx 2 tbsp plain flour. I also add 1/2 tsp of mustard powder to this.

Slowly is the key, let it all meld together keep stirring and let it slightly bubble.

You then gradually add milk, 1 pint, and stir stir stir. It will warm and thicken over about 10 mins. Don't use a high heat because you may find it sticking to the bottom of the pan and it'll go lumpy.

The milk could be warmed with an onion, bay leaves, nutmeg and pepper and then added to the butter/flour or just add milk from the fridge.

Once the white sauce is thick, add grated cheese. Cheddar, red leicsteshire or cheese you like till melted.

You can fry leeks and bacon to add to this or mushrooms.

I make a basic white sauce and add shredded crab sticks for an omelette filling sometimes.

You can then add whatever you want to it & adjust the seasoning too

grand job guys , i"ll have a go at the weekend, im fed up buying the ready made ones thanks for your time xx
Use cream cheese.
Lidl sell wee pots with herbs or garlic, creamy in colour like Scottish crowdie better than white supermarket tubs.
Make slits in chicken breasts(on the inside) , shove in some cheese & wrap the chicken round another dod in the middle. Wrap a slice of bacon or proscitto round the chicken. Saute leeks or mushrooms & add the chicken parcels. Cook very gently to keep the chicken moist, The cheese will melt & make the sauce with the veg& chicken juices. You could add onion/garlic with the veg or use chilli oil.

For pasta. Cook & drain broccoli (not too long, keep it bright green & just soft) smash it up with the cream cheese & stir in the cooked pasta. Serve with a dollop of tomato pasta sauce in the middle (for colour& flavour contrast) & parmesan on top.
