I whizzed this up last night.
3 baking potatoes-peeled and sliced
2 large leeks-outer layer removed,and remainder sliced. Leave to soak in a bowl of cold water.
1 Knorr Vegetable or chicken stock cube
Lots of freshly ground black pepper,salt to taste
1/2 pint skimmed milk
Place the potatoes in a large pot with just enough water to
cover.,bring to the boil and then turn the heat down and let simmer until the potatoes are almost tender. Add the washed leeks and the stock cube and continue to simmer until the leeks have softened. When done take off the heat and let cool slightly, then blitz with a hand blender until thick and creamy. Add the milk,reheat gently ........and eat!..I got enough for 3-4 quite filling servings.
