use up your veg!

tonight, I decided to use up all the bits of veg I had left over & although I am vegetarian and eat a lot of vegetables this turned out so nice so thought I would share it. It would ideal with a meat dish too as a side portion. You could use any combination of veg but this is what I found/used. 1 small leek, 1 carrot, small piece of broccoli, small piece of swede, 1 parsnip, small amount of cabbage....think that was all. I chopped it all up (but not too small) & popped it into a pan of water with a bay leaf. cooked it for 7-8 mins. Meanwhile, I made about 1/2pt of white sauce & added around 3ozs of cheddar cheese to this with some freshly ground black pepper. When veg was done, I transferred it into a casserole dish, poured the sauce over & gave it a stir, then topped it with some more grated cheese. Popped it under the grill till bubbling & it was really very yummy

I would have put some broad beans in too if I had remembered they had been frozen. just love them. What surprised me is the amount it made & when you think you could pay �� for a veg bake at the supermarket which is full of preservatives etc & this honestly took me no more than 15 minutes from start to finish
I make something similar but saut� some onions, mushrooms, peppers etc lightly, add some finely chopped fresh chilli and a little turmeric and garam masala, then mix these with the boiled veg and pour over a strongly flavoured cheese sauce and either heat it all through in the oven or pop under the grill as you describe. You could also add a can of rinsed and drained cooked pulses (eg chickpeas or kidney beans) if you like them, for added protein.
thanks for your ideas. I cannot eat onions or anything spicy but I could add some pulses as you said. Its just something I decided to put together last night to use up some veg. doesn't take a lot of imagination I know but at least I knew what went in it and had second portion tonight with a jacket spud. thanks again for your suggestions
Another way of using up left over veg is to simply saut� the bits in a little olive oil and when golden brown remove from the pan, add a couple of beaten eggs and watch whilst the eggs turn themselves into solidity... When virtually set, gently pile the chopped veg back on top of the veg, add some grated cheddar and brown off under a preheated grill. Great served up with a slice of bread and butter/marge or some mashed potato.
