Manchester Tart

Does anyone have a manchester tart recipe please. This was my favourite school dinner pudding. I remember the custard was pink and it was yummy.

I love Manchester Tart, our local bakers sells them ready made, but the basic recipe seems to be:

Shortcrust pastry base. Spread a layer of raspberry jam over the base. This is then topped with thick custard and a sprinkling of coconut. Leave it until the custard has set - and enjoy. I suppose the pink custard could have been blancmange - another of my favourites. Hope this helps.
