peel apples, cookers prefferably add a brown sugar to taste, lemon juice, water (not to much) all into a pan and cook on a low heat until the apples have broken down, mash them if you want it a bit smoother

alternatively, peel and slice apples and put in bowl with one spoon of water. bung in microwave and do for a minute. give them a good mashing with a fork and then do for a further minute or so if they're not all soft. once they're completely soft, give them a good stir and add however much sugar you need to your taste and maybe a knob of butter.
I've used this one often... it's easy and freezes really well:
3 to 4 lbs of peeled, cored, and quartered apples. (Make sure you use a good cooking apple like Golden Delicious, Granny Smith, Fuji, Jonathan, Mcintosh, or Gravenstein.)
4 strips of lemon peel - use a vegetable peeler to strip 4 lengths
Juice of one lemon, about 3-4 Tbsp
3 inches of cinnamon stick (be sure it's fresh)
1/4 cup of dark brown sugar
up to 1/4 cup of white sugar
1 cup of water
1/2 teaspoon of salt
Method
1 Put all ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes.
2 Remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher.
You can put it in individual freezer proof containers or even freezer bags and it'll keep for at least a year in a good, cold freezer...
Freezes easily, lasts up to one year in a cold freezer.

yes, the one i do freezes well too. i used to use the biggest bowl that would fit in the microwave and fill it with sliced apples from my mum's tree. i'd freeze it in useable amounts - say a margarine tub - and then transfer the frozen blocks of sauce into plastic bags, take up less room and then you can re-use the tubs too.
ooh, i feel an apple crumble coming on :)
