get 3 eggs and whisk them up with a fork. Add 3 tablespoons of cold water. heat oil in pan and pour eggs/water in. When bottom of ommlette is brown flod it in 1/2 and cook for a bit longer (putting filling in before fold if wanted)
if you prefer 2 eggs, use 2 tblspns water instead
Seriously.? My 11 year old son can rustle up an omelette.. Isn't it the first thing everyone learns to make..?! (well that, and marmite on toast.)
To make it super fluffy, separate yolk from white beat both separatly, white till stiff, yolk with water, fold in white and then pan fry yummy !
I used to do that years ago, but didn't like the texture. Now I just fold the yolks into the white, no beating or whisking, as Delia says.
This is how I do mine and my husband loves it. Heat some oil in a pan for a few minutes not olive oil. Put 3 eggs on a bowl with salt & pepper whisk and when the oil is hot put in the pan on med heat. Cook for about 6 mins.
3 beaten eggs mixed with a bit of milk,heat oil on medium heat,pour in,and then cover ,add filling,and keep covered,and this avoids needing to turn,and they turn out fluffy every time.

i used to turn omelette's into scrambled egg, use a non stick pan and have a decent spatula or palette knife to help you fold it.
