Baked Eggs With Tomato And Chorizo

Baked eggs with tomato and chorizo is a wonderful simple Spanish breakfast. Everything is baked together; the flavours from the chorizo soak into the eggs and tomatoes for a delicious, hearty breakfast.
Chorizo is a Spanish cured sausage; it is flavoured by paprika which gives it, its vibrant deep red colour and wonderful spicy flavours. Chorizo taste delicious as it is, but is a fantastic ingredient to cook with, it instantly species up a meal and adds a rich warm flavour. Perfect for breakfast in winter.
Ingredients
- 1 garlic clove
- 3 tomatoes, roughly chopped
- 200g chorizo
- 4 eggs
Method
- Preheat the oven to 180C.
- In a frying pan cook the chorizo until it release red oil; remove the chorizo with a slotted spoon. Add the garlic to the frying pan and cook in the chorizo oil, then add the tomatoes and cook until they become soft.
- Place the tomatoes and chorizo in 4 small oven dishes then crack an egg on top.
- Bake for 10 minutes.
