Breakfast Potatoes With Bacon

A big breakfast is perfect for a busy day full of physically activity. If you are planning on hiking, mountain biking or exploring the great outdoors then a cooked breakfast is a perfect start to the day. It will keep you satisfied and full of energy.

Potatoes are very hearty, when fried with bacon and onions they make a delicious filling breakfast. The bacon adds flavour to the deliciously crispy potatoes. To complete this yummy fried breakfast serve with a fried egg.

Ingredients

  • 2 large potatoes, peeled and cubed
  • 4 slices of bacon
  • 1 onion

Method

  1. Boil the potatoes, when cooked drain and rinse under cold water.
  2. In a frying pan cook the bacon, when the bacon is ready drain most of the fat of but leave about 1 tbsp in the pan.
  3. Add the onions and fry until tender, then add the potatoes and fry until lightly brown.
  4. Serve with a fried egg.
